Chocolate Lava Cake
Ingredients:
60g refined sugar
100g chocolate
100g butter
2 egg yolks
50g cake flour
1 pinch of salt
1 whole egg
Instructions:
1. Melt the chocolate and butter together until smooth.
2. In a separate bowl, whisk the egg yolks, whole egg and sugar until well combined.
3. Sift the cake flour into the egg mixture and mix thoroughly.
4. Gently fold the melted chocolate and butter mixture into the egg and flour mixture.
5. Pour the batter into silicone or metal molds, and chill in the refrigerator until firm.
6. Bake the lava cakes in a preheated oven at 210 °C for 7–10 minutes, depending on your oven type, until the edges are set but the center remains soft.
Presentation Tips:
Serve the lava cake with ice cream and fresh fruits, and drizzle with dark chocolate ganache for an elegant finish.
Chocolate Banana Bread With Marshmallow
Ingredients:
50g Markenburg chocolate
4 ripe bananas (3 mashed, 1 sliced for topping)
3 eggs
1 tbsp honey
180g cake flour
8g baking powder
3 drops vanilla essence
10g mini Markenburg marshmallows
5 mini marshmallows (for topping)
Instructions:
1. Mash 3 bananas and mix with eggs until well combined.
2. Gradually fold in the flour, baking powder, vanilla essence, and honey into the banana-egg mixture.
3. Mix the melted chocolate and the 10g marshmallows gently.
4. Pour the batter into a prepared baking pan.
5. Slice the remaining banana and place on top of the batter along with the 5g mini marshmallows.
6. Bake in a preheated oven at 160 °C for 45 minutes, or until a skewer inserted comes out clean.
Presentation Tips:
Melt a flavored Markenburg chocolate on a plate and place a slice of the bread on top.
Garnish with ice cream, whipped cream, and a sprinkle of colored mini Markenburg marshmallows for an appealing presentation.
Chocolate Ganache Sauce
Ingredients:
200g Markenburg chocolate
150ml All-purpose cream
20g butter (room temperature)
Instructions:
1. Heat the all-purpose cream to approximately 70 °C.
2. Chop the chocolate into small pieces.
3. Remove the cream from heat and stir in the chocolate pieces, until fully melted and well blended.
4. Add the butter and mix until smooth. The ganache is now ready to use.
Serving Tips:
This rich and creamy ganache can be used in a variety of dessert applications.
Dip fruits, drizzle over ice cream, use as a cake topping, or incorporate into plating designs.
